Royal Macarons

I consider myself to be one of the lucky ones. There are bakers out there who are waking up and heading off to work at 4am to prepare breads, pastries, tarts, and cakes for those who rise early for the first taste of a crisp croissant or the smell of freshly baked sourdough.

I am not one of those bakers.



I may wake earlier than Husband some people I know and have often found myself flooding the patisserie with the quiet hum of artificial light on a pitch black morning, but 4am is not my hour and I count my blessings that I don't know what goes on at that time of day.... usually.

However, with that said, today I had my first taste of a 4am work day. And I stepped into it willingly; eagerly even.

You see, today was the day of the Royal Wedding (in case you hadn't heard from your vantage point under a rock) and, while I haven't been exactly caught up in the "hype" leading up to it, I certainly have an appreciation for a good wedding. Make it a royal wedding and I'll attend at any hour of the day or night, apparently.

So I figured, if other bakers are waking up at this hour on a regular basis, I will honour them and their diligence by doing as they do and, as a bonus, I will get to watch the big event!

Therefore, the macarons you are about to enjoy tomorrow at the Market are not just any macarons. They are Royal Macarons..... by association. The way I see it, since they were made in the wee hours while I was simultaneously attending (from afar) the Royal event, that makes them Royal as well and I'm sticking to it.
